The better the cut of beef you use, the better the flavor will be of your roasted beef but it's not strictly necessary to buy expensive cuts at all! You can use eye of round, top round, rump roast, chuck roast, or beef tenderloin for this recipe.

Tenderloin, aka filet mignon, is the most tender part of the cow, and so this is an expensive cut but roast tenderloin has the most buttery texture that's soft and absolutely delicious.

But you can still get incredible results from any cut you have on hand. No matter which one you use, the key is to roast it till it's soft enough to cut with a fork, and it should melt in the mouth when eaten.

You can even make a bone-in roast with this recipe, but it will take longer to roast in the oven. If you feel your roast cut doesn't have enough fat and is very lean, you can roast it with some butter or olive oil.

Use a meat thermometer to determine when the roast is done cooking for the most reliable results.

Get it to an internal temperature of 135 degrees Fahrenheit for medium-rare, 145 degrees for medium, or 150 degrees for medium well.

Mrs. Dash seasoning: This is a great seasoning mix because includes a lot of great spices or dried herbs such as onion powder, marjoram, oregano, rosemary thyme, cayenne pepper, lemon juice powder, etc that go really well with the roast beef and are a great alternative to using fresh herbs.
Seasonings: We'll also need some salt and black pepper to season our delicious beef to the right level.

For Roasted Vegetables:

  • Potatoes: No roasted veggie recipe is complete without some potatoes! I've used red russet potatoes in this recipe that are homegrown, but you can use store-bought ones. You can also use yellow potatoes (Yukon Gold) to make this recipe.
  • Carrots: Carrots are another veggie that roasts really well! I've used baby carrots here, but you can also use regular carrots! Just make sure to chop them evenly into 1 to 2-inch pieces.
  • Broccoli: Broccoli along with carrots and potatoes will make this roasted beef a nice and filling meal.
  • Parsley: We'll also need some fresh parsley to garnish our delicious dish.

Mayonnaise: Adding some mayo to your veggies is going to make such a big difference because it'll make it taste richer and better, and the veggies will also roast better. I've used homemade mayonnaise in this recipe to keep it lower in calories, but you can also go for store-bought mayonnaise.
Mrs. Dash seasoning: We'll, again, use this delicious seasoning mix that we also used for the roasted beef.
Sea salt: To season our veggies perfectly, we'll also need some salt.
Garlic: Adding fresh garlic cloves elevates the dish to the next level, giving you veggies that complement the roasted beef perfectly.

How to Prep Beef for Roasted Beef

Let's start by prepping and marinating our beef first! Pat the beef dry with paper towels and cut the meat into 1-inch (2.5 cm) cubes and place it into a small glass bowl that has a lid.

Season it with Mrs. Dash seasoning, salt, and pepper. Cover the bowl with a lid and let the meat marinate for 2 - 4 hours in the fridge. You don't have to marinate it for that long if you're short on time.

How to Prep Veggies for Roasted Beef

Preheat the oven to 400 F (204 C).

Start by rinsing broccoli, cutting it into florets, and placing it into a large bowl.

Next, rinse and scrub the potato with a vegetable brush. Cut the potato into 1-inch (2.5 cm) cubes, and add to broccoli florets.

Then rinse baby carrots and add to the potato and broccoli florets. Add mayonnaise, Mrs. Dash seasoning, pressed garlic, salt, and pepper. Mix to combine.

This step is optional. Separate broccoli from potatoes and carrots. I personally prefer to add broccoli halfway through roasting time because we like broccoli a bit crunchy.

Place vegetables in a 13 x 18 baking sheet or roasting pan lined with parchment paper. Add seasoned meat and bake for 20 minutes at 400 F (204 C).

Remove the pan from the oven. Add broccoli florets and roast for additional 20 minutes.
