How to make Sausage Breakfast Casserole
You can jump to the recipe card for full ingredients & instructions!
- Brown the sausage and set to one side.
- Soften the vegetables in the same pan.
- Combine the ingredients for the egg mixture.
- Place the cooked sausage and veggies in the bottom of a prepared casserole dish.
- Pour over the egg mixture and top with cheese.
- Bake!
Can I make this casserole without sausage?
Absolutley! To make this a meat-free breakfast you can simply omit the sausage, or, use a plant-based sausage. Similarly, you can make this with other meats like ground beef, crispy bacon or cooked shredded chicken.
What other vegetables can I use in this casserole?
This sausage breakfast casserole is easy to adapt to your tastes, and you can easily add in other veggies that you have to hand. Broccoli, sweet potatoes, tomatoes and anything else you fancy can easily be added in. just make sure that they are cooked and soft and tender before adding them to the dish.
Can I make this breakfast casserole ahead of time?
This is a great make ahead breakfast! You can make up the casserole before baking it up to a day ahead of time and keep it covered in the fridge til you are ready to bake it. Leftovers will keep well in the fridge for up to 5 days and can be enjoyed cold or reheated in the oven or microwave.
Can I freeze this casserole?
This sausage casserole freezes really well. Wrap it securely in plastic wrap and foil and it will keep well for up to 2 months. I find it easier to freeze it whole in the baking dish, though you can wrap individual portions. Thaw in the fridge overnight before reheating.

Ingredients
- 1 pound breakfast sausage
- 12 eggs
- 1 cup sour cream
- 1/4 cup cream or milk
- 1 teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ½ cup mushrooms sliced
- ½ cup onion diced
- ½ cup green bell pepper diced
- ½ cup red bell pepper diced
- 2 cups shredded cheddar cheese divided
- Green onions sliced, for garnish
Instructions
Preheat the oven to 350 degrees F. Spray a 9×13-inch casserole dish with cooking spray.
In a skillet set over medium heat, brown the sausage. Remove the cooked sausage to a paper towel-lined plate to drain.
1 pound breakfast sausage
Add the mushrooms, onion, and bell peppers to the skillet and sauté for 2-3 minutes until softened. Set aside to cool slightly.
½ cup mushrooms, ½ cup onion, ½ cup green bell pepper, ½ cup red bell pepper
In a large bowl, combine the eggs, sour cream, cream, salt, garlic powder, and pepper. Whisk until well combined. Fold in 1 cup of cheese.
12 eggs, 1 cup sour cream, 1/4 cup cream, 1 teaspoon kosher salt, ½ teaspoon garlic powder, ½ teaspoon black pepper, 2 cups shredded cheddar cheese
Layer the cooked sausage and vegetables in the casserole dish. Pour the egg mixture over the top, then sprinkle with the remaining cheese.
Pour the mixture into the prepared pan. Bake for 35-40 minutes, until the edges are set and the center is just barely jiggly.
Serve garnished with sliced green onions.
